Dr. Afton Halloran

Afton Halloran became a consultant for the Nordic Food Policy Lab, after a PhD on sustainable alimentation systems. Those findings led her to take a greater interest in new forms of agriculture, and particularly at insects farms that started to expand, especially in Asia, and that today enable the production of high-quality proteins at a low price, and in a way that is more responsible toward the environment. Since then, she has demonstrated that we can innovate further to make animal protein production more sustainable and valuable for all. She was responsible for this topic for the FAO report that remains the most downloaded report to this day: “Edible insects: future prospects for food and feed security”. She will come to introduce her vision of a different alimentation future.
